Based off of something I saw on the Food Network once, today at the start of the smoking process I used some fresh rosemary and a thickly sliced onion for some additional smoke flavor. It really smelled good.

I often throw on onions on the grill and as you said the aroma is delightful.

Try some fresh herbs that you like right at the beginning. I used rosemarry and I could actualy get a hit of it in the flavor of the meat.
