Found a whole pork loin on sale and had the butcher slice some really thick Pork chops. These things came out at around a pound each. Much too big for any one person so we just grill one for the wife and I.
I buy leggs barbecue seasoning at the local Harveys or IGA grocery store.
http://www.alliedkenco.com/bbq/seasoning_bbq_legg.htmThe night before I give it a good coating of mustard then putt on a heavy coat of leggs then rub it in. The next day I take it out at least 1/2 hour before grilling.
I take new-red potatoes, the ones that are about golf ball size and nuke them until they are nearly done. I coat them with just a bit of Classico Olive oil then sprinkle with Kosher salt. When I put the chop on a very hot grill I put the golf ball sized potatoes on the grill next to the meat. The meat takes right at 20 minutes to cook.
