With Spring come warmer weather. Has anyone fired up their smokers yet?

Steve, even With the warmer weather that we had early this Spring, I have yet to fire up any of my smokers.  I thought about it a couple of times, but it did not happen.

Going to change that today.  I have 40 pounds of Pork to smoke today. My neice is graduating college tomorrow, and we are having a celebration.  It is going to be a great way to fire up the smoker for the first time in way too long!  I am just glad that the torrential rains passed through here overnight.  Kept me awake, but it won't keep me from smoking today.

In January, ran 50#s of butts and the only good brisket I could find in my wood burner. 

Then February four racks of ribs.  I do  ribs on a large, homemade grill with the coals 18" below the meat rack.  I use pruned apple and peacch from my orchard.  I prefer a grill to cut down on air flow across ribs.  Same grill I use for chicken and rotisserie.
