St. Louis is probably my favorite rib cut. I'm not a huge fan of back ribs.

St. Louis style sure makes for more even cooked ribs over untrimmed spares. I am with you on the babybacks. They seem to be just sauce boats. I have more luck with loin backs but still prefer spares or the st Louis trimmed spares.

I agree that St. Louis spares are the best, but every once in a while if I see some nice loin backribs, I will cure them before smoking. Kind of ham/bacon on a stick for something different, but really good.

Made some excellent St. Louis style spares the other evening. I may have to do more testing to see if they're my favorite!
