Just wanted more information or ideas as what to use to create smoke
I usually go with Hickory or misquite
I toured the Tabasco plant in Avery Island LA and picked up some of their oak barrels that they made into chips for smoking. Adds some flavor to the food!
Anybody ever use peat?

I went to a local Irish pub and in the gift shop they had peat brickets that you soak and put in the smoker for a real earthy flavor, I must admit that I have only used it once, will probably do it again and post the results someday.
