what type of woods?

Just wanted more information or ideas as what to use to create smoke
I usually go with Hickory or misquite
I toured the Tabasco plant in Avery Island LA and picked up some of their oak barrels that they made into chips for smoking. Adds some flavor to the food!
Anybody ever use peat???? I went to a local Irish pub and in the gift shop they had peat brickets that you soak and put in the smoker for a real earthy flavor, I must admit that I have only used it once, will probably do it again and post the results someday.

Peat!  Now that is something new.  Any fruit tree will do just fine.  Avoid any sap laden wood like pine.  Try a mixture of pecan and hickory.

I am a hickory, oak, and wild cherry man.  I find that any nut or fruit tree is just perfect.  Pecan (the cadillac of woods) if you can get it is the ultimate.

I love Hickory... but Oak is good too (or a blend of the two).

Very interesting regarding the Irish Peat stuff.  I wonder if you could take regular Peat Moss that you get at lawn and garden stores and make some kinda briquettes?????
