Memorial Monday ribs

The first thing we do is cut the flap off the back and remove the membrane.
Use a kitchen table knife for this and a paper towl for a good grip.

Next give them a very thin coat of mustard

Now coat with your seasoning.  Do this the night before.

1:00 pm  A bad wind blew through and just to the south so ribs are on hold.  Temp is still to high in the smoker anyway.  Keep the ribs in the cooler until ready to put on for maximum smoke ring.

These were good ribs but not my best.
Notice that the red smoke ring was through out the rib meat.  The meat pulled from the bone with just the right amount of pull.
These were Carolina Pride ribs, I will not use that brand again.

One new thing I tried on these ribs that I liked was sprinkling the ribs with the rub after the last mop.   Thinks for all the good words.
