Turkey drumsticks
« on: July 04, 2004, 09:40:36 PM »
I brined the drumstick in half a gallon of water with 1/2 cup of kosher salt and 1/4 of a cup of brown sugar.  I then used a saltless/sugarless rub (see rub section) and smoked them for 1 1/2 hours and then wrapped them (seperately)in foil for another hour.

Although everybody like them I think next time I will leave the sugar out of the brine and add it to the rub.

Just how many boards can I be on anyways.

It was my first time.  Didn't have a clue as to how to do them, so I made it up on the fly.

They got good reviews and were moist and tender, but I thought the flavor could be much better.
