I used this on both my brisket and ribs
1/4 cup kosher salt
1/4 cup brown sugar
1/2 Tablespoon ground cumin
1/2 Tablespoon chili powder
1/2 Tablespoon black pepper -- freshly cracked
1/2 Tablespoon mustard powder
1/2 Tablespoon paprika
1/2 Tablespoon onion powder
1/2 Tablespoon garlic powder
1/2 Tablespoon cinnamon sugar

I try to keep the temp around 250 and no less then a 1 hour per pound. Was 9 pounds and cooked 10 hrs.
A lot of people cook at 225 and 1 1/2 hours per pound.
I like the internal temp of the meat to hit at least 193, but not go over 200.
